Ingredients You Need
Chickpeas
Soaked overnight and boiled until tender.
All-Purpose Flour
Used to prepare soft and fluffy bhature.
Onion & Tomato

How To Prepare Chole Bhature
Making the Bhatura Dough:
Mix the flour, semolina, salt, baking soda, sugar, and curd in a large bowl.
Slowly add lukewarm water and knead into a smooth, soft dough.
Smear a little oil over the dough, cover it tightly, and set it aside in a warm place for about 2 hours to ferment.
Boiling the Chole:
Wash the soaked chickpeas and place them in a pressure cooker with 1.5 cups of water, salt, baking soda, and the tea bags.
Cook for 1 whistle on high, then simmer on low heat for 3 to 7 minutes until tender. Remove the tea bags once done.
Preparing the Chole Gravy:
Heat oil in a pan, add cumin seeds, and let them crackle.
Add ginger paste, garlic paste, onion paste, green chili paste, tomato puree, and dry spices (except garam masala). Sauté until oil separates from the masala.
Pour in the boiled chickpeas and simmer for a few minutes so the flavors blend. Finish with a pinch of garam masala.
Frying the Bhature:
Heat plenty of oil in a deep frying pan or kadhai until very hot.
Gently slide the bhatura into the hot oil, press lightly with a slotted spoon until it puffs up like a ball, and flip to golden brown on both sides.
