How To Prepare Rajma Chawal
THE ART OF COOKING RAJMA CHAWAL
Making The Rajma :
Boil The Beans : Place soaked rajma in a pressure cooker with 2 cups of water, salt, and baking soda. Cook for 1 whistle, then simmer for 6 to 7 minutes until soft.
Make the masala: Heat oil in a pan. Add cumin seeds, hing, turmeric, and coriander powder. Add the tomato-ginger-chilli paste and sauté until oil separates from the mix.
Combine:Add the boiled rajma along with its water (or adjust consistency with extra water) and salt. Simmer for 5-7 minutes so the flavors blend well.
Finish: Mix in the garam masala and garnish with fresh coriander leaves.
Making The Rice :
Rinse the rice: Place the basmati rice in a bowl and wash it gently with cold water. Swirl the grains and change the water 3 to 4 times until it runs completely clear to remove extra starch.
Soak the grains: Leave the washed rice in fresh water to soak for 30 minutes. This helps the long grains expand fully without breaking during cooking. Drain all the water.
Measure: Place the drained rice into the pressure cooker. Add 1.5 times of fresh water and ½ tsp of salt. Stir gently.
Cook:Lock the cooker lid securely. Turn the stove to high heat. Wait for 1 single whistle then turn off the heat right away.
Rest:Do not open the lid. Let the cooker sit closed for 15 to 20 minutes until all pressure drops on its own.
