How To Prepare

Prepare the Ingredients:

  • Cut the paneer into square or rectangular chunks.
  • Soak the cashews in water for 30 minutes, then grind them into a smooth paste.

    Grind the tomatoes, ginger, and green chilies together into a fine puree.

    Whisk or churn the fresh cream/malai until smooth.

    Lightly Fry the Paneer:

    Heat 1 tablespoon of oil or ghee in a non-stick pan.

    Lightly shallow-fry the paneer cubes until they get a pale golden hue, then take them out.

    Make the Gravy Base:

    Heat the remaining oil/ghee in a pan or kadhai.

    Add cumin seeds and let them crackle.

    Reduce the flame, then add turmeric powder, coriander powder, and red chili powder.

    Pour in the tomato-ginger-garlic-chili paste and sauté the mixture on medium heat until oil starts separating from the edges.

    Add Cashews and Cream:

    Add the ground cashew paste into the tomato masala. Stir continuously and cook for 2–3 minutes.

    Add salt and garam masala. Add a little water if you want to adjust the thickness of the gravy.

    Combine Paneer and Simmer:

    Gently drop the fried or soft paneer pieces into the bubbling gravy.

    Cover and cook on low heat for 3 to 5 minutes so the paneer absorbs the flavors.

    Garnish with fresh chopped coriander leaves.
