How to Prepare Pav Bhaji
Turn simple vegetables into a rich, buttery bhaji and serve it with perfectly toasted pav for an authentic street-food experience.
1. Boil the Vegetables:
In a pressure cooker, add the cauliflower, carrot, peas, beetroot, and a little water. Cook for 3 to 4 whistles until soft.
Mash the boiled vegetables thoroughly using a potato masher and set aside.
2. Prepare the Onion-Tomato Masala:
Heat butter and oil in a large pan or tawa on medium flame.
Add cumin seeds and let them crackle, then add finely chopped onions and sauté until translucent/soft.
Stir in the ginger-garlic paste and green chilies; cook until the raw aroma disappears.
Add the tomato puree/grated tomatoes, turmeric powder, Kashmiri red chili powder, salt, and 1 tablespoon of the pav bhaji masala. Sauté until oil separates from the masala.
Add the finely chopped capsicum and cook for 2 minutes.
3. Combine and Mash:
Add the mashed mixed vegetables and boiled potatoes into the pan.
Pour in about 1 cup of water and mash everything continuously with a heavy-duty masher while it simmers on medium flame for 5 minutes.
Stir in kasuri methi, a dollop of fresh butter, and a squeeze of fresh lemon juice. Garnish with chopped coriander leaves.
4. Toast the Pav:
Slice the pav/buns horizontally.
Melt a generous amount of butter on a hot tawa, sprinkle a tiny pinch of pav bhaji masala and coriander, and toast the pav on both sides until golden and buttery.
5. Serve:
Serve the hot bhaji alongside the buttered pav, topped with an extra pat of butter, finely chopped onions, and a lemon wedge.
