Traditionally enjoyed with generous amounts of ghee, this hearty combination reflects the rich flavours and rustic food traditions of Rajasthan.

Rajasthani Spices
Brings warmth, aroma and depth to the dal and baati.
How to Prepare Dal Baati Churma
Prepare each element with care, then bring them together for an authentic and satisfying Rajasthani meal.
Step 1. Cook the Dal :
Wash and soak the mixed lentils for 30 minutes.
Add the soaked lentils to a pressure cooker with 3 cups of water, turmeric powder, and salt. Cook for 3 to 4 whistles until soft, then lightly mash.
Heat 2 tbsp ghee in a pan. Add cumin seeds, asafoetida, ginger-garlic paste, and green chilies, and sauté until fragrant.
Add chopped onions and cook until golden brown, then mix in chopped tomatoes and dry spices.
Pour in the boiled dal, adjust the water consistency, and simmer for 5–7 minutes. Finish with garam masala and fresh coriander leaves, plus a quick ghee tadka on top if desired.
Step 2. Make the Baati:
In a large bowl, mix the wheat flour, semolina, carom seeds, baking soda, and salt.
Rub the ghee (moyen) into the flour mixture until it holds its shape when pressed in your fist.
Gradually add lukewarm water to knead a tight, stiff dough. Cover and let it rest for 30 minutes.
Divide the dough into equal portions, roll them into smooth balls, and make a small thumb indentation in the center.
Bake them in a preheated oven, appe pan, or heavy-bottomed kadhai on low-medium flame for 20–30 minutes, turning frequently until golden brown and cooked through.
Dip the hot baatis generously in melted desi ghee.
Step 3. Make the Churma:
Take 2 to 3 warm or cooled baked baatis and crush them in a mixer jar into a coarse powder.
Heat ghee in a pan, add the crushed baati powder, and roast on low flame for 2 minutes.
Turn off the heat, then mix in jaggery powder, cardamom powder, and chopped dry fruits.
Step 4. How to Serve:
Break open a hot ghee-soaked Baati in a bowl, pour hot Dal over it, and serve alongside sweet churma, and a slice of lemon.
