How to Prepare UP's Famous Kachori Sabji

From preparing the perfectly spiced filling to frying golden, crispy kachoris and cooking a delicious aloo sabji, discover the simple steps to recreate this beloved Uttar Pradesh street-food classic at home.

Part 1: The Secret Masala & Kachori Filling

Take the soaked urad dal and grind it into a coarse paste without adding any water.

Roast the Besan: Heat 2 tbsp oil in a pan on low flame. Add cumin seeds, crushed fennel, and crushed coriander seeds. Let them splutter. Add 2 tbsp besan and roast it on low heat for 1–2 minutes until it becomes aromatic.

Mix Spices & Dal: Turn the heat down. Add all the dry spice powders (chilli powder, coriander powder, turmeric, amchur, garam masala, kasuri methi, sugar, and salts). Stir quickly.

Cook Until Dry: Add the coarsely ground moong dal. Cook this mixture continuously on low heat for about 8–10 minutes until the dal loses all its moisture, turns completely dry, and gets crumbly. Remove from heat and allow the filling to cool down completely.

Part 2: The Khasta Kachori Dough

Prepare Dough: Mix maida, suji, and salt in a bowl. Pour in the ¼ cup oil/ghee. Rub the flour between your palms until it holds a shape when pressed in your fist. Gradually add water and knead into a smooth, semi-soft dough. Do not over-knead Cover it with a damp cloth and let it rest for 15–20 minutes.

Stuff the Kachori: Divide the dough into equal small portions. Roll a ball out or flatten it with your fingers, keeping the edges thinner than the center. Place a small spoonful of the cooled dal mixture in the middle. Bring the edges together, pinch to seal the top tightly, and press it flat. Gently roll or press it into a small disc.

Low-Heat Frying: Heat oil in a deep kadhai on low flame Drop the kachoris in. Fry slowly, letting them rise to the top and puff up naturally. Flip carefully and fry until they turn crisp and golden brown on both sides (takes around 12–15 minutes per batch).

Part 3: The Famous UP Street-Style Aloo Sabji

Bloom the Spices: Heat 2 tbsp oil in a pan. Add cumin seeds, dry red chillies, and the standard hing. Add the chopped ginger and green chillies and sauté for 30 seconds.

Make the Spice Base: Turn the flame to low. Add the dry spices: kashmiri red chilli powder, coriander powder, turmeric, roasted cumin powder, and garam masala. Stir them quickly into the oil for 10 seconds so they don't burn.

Simmer with Water: Immediately pour in about 2 to 2.5 cups of water into the spices and bring it to a boil. Add the soaked strong hing water, regular salt, and black salt.

Add Potatoes & Thickened Finish: Add the roughly hand-mashed boiled potatoes. Mix well. Let the curry simmer on medium-low heat for 8–10 minutes until the gravy absorbs all the flavors and reaches a semi-thick consistency.

Final Touch: Stir in the amchur powder and crushed kasuri methi. Mash a few potato pieces against the side of the pan to naturally thicken the jhol (gravy). Garnish with plenty of fresh coriander leaves.

Crush the top of a crispy Khasta Kachori with your thumb and ladle a generous scoop of the piping-hot Aloo Sabji right over it to serve.
