How To Prepare Masala Dosa

Preparing the Batter:

Soak: Clean and wash the urad dal and fenugreek seeds together, then soak them in water for 4 hours or overnight. Wash and soak the rice in a separate bowl for the same duration.

Grind: Drain the water and grind the dal into a very fine paste. Grind the rice slightly coarser.

Mix and Ferment: Combine both mixtures, add salt and baking soda, and mix well to a pouring consistency. Allow it to ferment in a warm place until bubbly.

Cooking the Dosa:

Heat Tawa: Heat a non-stick flat griddle (tawa) wipe it clean with a damp cloth to moderate the temperature.

Spreading: Pour a ladleful of batter in the center of the tawa and spread it outward in a circular motion.

Cooking: Pour a few drops of oil around the edges. Cook on medium-high heat until the bottom turns golden and crisp.

Assembling: Place a portion of the potato masala in the center, fold the dosa over it, and serve hot.
