COOKING PROCESS
How to Prepare Idli Sambhar
Follow these traditional steps to prepare soft fluffy idlis and flavorful sambhar with authentic South Indian taste.
Step-by-Step Instructions:
Prepare Sambhar
Pressure Cook: Put oil, mustard seeds, cumin seeds, fenugreek seeds, dry red chili, onion, tomato, pumpkin, carrot, salt, turmeric powder, red chili powder, sambar masala, soaked toor dal, and water into a pressure cooker.
Whistle: Cook for 2 pressure whistles until tender.
Add Finishing Touches: Release the pressure, then mix in boiled drumsticks, tamarind paste, and fresh coriander leaves.
Simmer: Boil the mixture for a few minutes so the flavors blend well.
Serve: Serve hot with soft idlis.
Prepare the Idli
Soak the Ingredients :
Clean and wash the rice and urad dal thoroughly in water.
Soak the urad dal and fenugreek seeds together in a bowl of water for 4 to 5 hours or overnight.
Soak the rice in a separate bowl of water for 4 to 5 hours or overnight.
Grind the Batter:
Drain the excess water from the soaked urad dal.
Grind the dal into a smooth, fine paste using very little water.
Drain the water from the rice and grind it into a slightly coarse paste using minimal water.
Mix and Ferment:
Combine the urad dal paste and rice paste in a large bowl.
Mix them well with your hands or a spoon to form a thick batter (similar to pakora batter consistency—not too runny).
Cover the bowl and leave it in a warm spot for 12 to 14 hours to let it ferment. It will double in volume and turn puffy. this process can be done by before you want to made it.
Steam the Idlis :
Add salt to the fermented batter and gently mix.
Grease your idli stand molds with a little oil.
Pour a spoonful of batter into each mold cavity.
Place the stand inside a steamer or a large pressure cooker (without the whistle) with a little water at the bottom.
Steam on medium heat for about 10 to 12 minutes until cooked through.
Let them cool for a couple of minutes before taking them out with a knife or spoon.
Serve it with hot sambhar.
