How to Prepare Medu Vada with Rasam

Follow these traditional steps to prepare crispy golden Medu Vada paired with flavourful and aromatic Rasam.

Prepare Rasam first

Boil the tomatoes: Wash the tomatoes, chop them roughly, and boil them in a pan with a little water until soft. Let them cool down, then mash or blend them into a smooth pulp.

Prepare the tempering (Tadka):Heat oil or ghee in a pan or kadhai. Add mustard seeds and let them crackle.

Add aromatics:Add asafoetida (hing), cumin seeds, curry leaves, green chilli, and ginger. Sauté for a few seconds on low heat.

Add tomato base: Pour in the tomato pulp/puree, add rasam powder, salt, and mix well. Sauté the mixture for 2 to 3 minutes until oil starts to separate slightly.

Simmer the Rasam: Pour in 2 cups of water (adjust consistency as preferred) and bring it to a boil. Lower the heat and let it simmer for 5 to 7 minutes so the flavors blend well.

Prepare the Medu Vada

Wash and Soak: Thoroughly wash both the Urad dal and Moong/Chana dal together. Soak them in clean water for 4 to 5 hours or overnight.

Drain out all the excess water. Transfer the soaked dal into a grinder. Grind it using very little water (only add 1–2 tablespoons if the blades stall).

Texture Check: Do not grind it into a completely ultra-fine, watery paste. The batter needs to be thick and slightly coarse.

Aeration (Crucial Step): Transfer the ground paste into a large mixing bowl. Add the salt, grated ginger, chopped green chillies, and fresh coriander leaves.

Whisking: Vigorous beat and blend the mixture with your hand or a spoon for a few minutes. The more you beat the dal, the more air incorporates into it, making the final vadas incredibly soft and fluffy inside.

Heat the Oil: Pour frying oil into a heavy-bottomed pan (kadhai) and bring it to a medium-hot temperature.

Shape the vada: Take about 1 to 1½ tablespoons of the fluffy mixture onto your wet fingers. Use your thumb to make a clean hole right in the center, giving it a classic doughnut shape.

Fry: Gently drop the shaped vada into the hot oil. Repeat the process, putting 3 to 4 vadas into the pan at a time depending on its size.

Turn and Flip: Fry on medium heat. Once the lower side firms up and turns golden brown, carefully flip it over.

Drain: Fry evenly until both sides are crisp and deep golden brown. Take them out using a slotted spoon and drain the excess oil.

Serve these crispy vadas screaming hot alongside traditional South Indian Rasam and Coconut Chutney.
